I thought I would share my favourite breakfast with you - Good Girl Granola.
It’s so delicious, and I have been making it for years.
It’s great because it hasn’t got all the bad ingredients that most packet cereals have and you can make it in large batches.
I store the it in Kilner jars with rubber seals and it stay fresh for ages – not that it lasts long with my appetite!
It takes hardly anytime to make, and you can vary the recipe with whatever appropriate organic ingredients you have available in your kitchen cupboard.
The quantity of ingredients are quite loose here as it really is a matter of taste.
The most important ingredient is the porridge oats, as that’s the basis of the recipe. Make sure you get good quality ones preferably organic and mine are gluten free too.
So here goes … you will need …
Ingredients:
2 large handfuls Porridge oats ( I use gluten free)
5 tablespoons of melted coconut oil
3 tablespoons of maple syrup
1 large handful of pumpkin seeds
1 large handful of sunflower seeds
1 large handful of chi seeds
1 large handful of raisons
1 large handful of desiccated coconut
1 large handful of goji berries
A generous sprinkling of cinnamon
Recipe -
Place the oven on at 180 centigrade
Crinkle up a baking paper sheet with some of the melted coconut oil and place on an oven tray.
Throw your porridge oats, pumpkin seeds, sunflower seeds and chi seeds onto the paper.
Pour in 4 tablespoons of melted coconut oil and 2 tablespoons of maple syrup and cinnamon, mix, (add more or less oil if you need)
Remember the seeds will need to be covered so they don’t burn.
Stir with a wooden spoon and whistle a little tune.
When nicely mixed, place in the oven for 15 minutes .. keep checking.. don’t let it burn,
Add the rest of the ingredients with 1 tablespoon of coconut oil and tablespoon of maple syrup – stir - place back in the oven for no longer than 5 minutes.
Do a little sun dance if its raining – its raining here today and I’m really going for it.
Take it out and leave to dry !
I have it with yogurt, apples, banana, cinnamon and raspberries (picked from the garden) or yummy stewed cinnamon apples.
Enjoy … hopefully it was sunny where you were or your dance worked .. go and have a sit in the sun as you wait for it to cool and crunch !!!
