Good Girl Heavenly Salad Dressing
I have been on my Vegan diet for a week now.
It’s quite strict as I am following an auto immune protocol too.
So I eat nothing but vegetables and fruit – no rice, no bread, no legumes and definitely no ice cream!
I get really hungry, and I haven’t started to feel better yet.
But on the plus side everything is starting to taste even more amazing and I am losing my weight - (I’m not doing it for that but it’s a nice side effect).
I have been making this good girl salad dressing for years, and it really livens up a salad.
It's very easy to make and great as a gift when going to a friend for lunch.
Recipe
150 ml good quantity olive oil
150 ml good quality balsamic vinegar or raspberry vinegar
2 cloves of crushed garlic
Half a squeezed lemon
Heaped teaspoon of Dijon ( or your favourite) mustard
Heaped teaspoon of local honey
Fresh rosemary
Dash of dukkah – optional
Salt and pepper
2 kisses ( don’t miss this … that’s the magic bit)
Put it in an antique glass jar too so it will look as good as it tastes.
It is amazing on fresh salad from the garden or avocados, baked potatoes or just about any other way you want to use it.
