Every day my husband goes to the boulangerie for his fresh crunchy French baguette, straight from the bakers oven, ready for his breakfast of fresh ground coffee, goats cheese confiture and organic butter.
I watch him and my mouth is watering, but what is a girl supposed to do?
The problem is that I need to be gluten free as gluten has a strong adverse affect on my system - so what do I do?
Winter is kicking in, the rain is bucketing down and fruit and yoghurt just won’t do it for me.
So I take my handy food mixer and in just over 40 minutes I will have a beautiful, tasty, soft honey & almond gluten free loaf to dive into.
Now my husband looks at me with envy. The smell of baking is wafting through the kitchen - there is nothing like the smell of organic fresh bread.
Yes. Because I'm nice, I will give him a slice or two. Don't worry.
I spread honey and a little butter on my freshly baked bread feeling its warmth.
I light a candle and it’s delicious, yet so easy for me to make. A great recipe if you are tired.
The gluten free almond bread is great in the toaster too by the way.
Ingredients
1 1/2 almond flour
2 tablespoons coconut flour
1/4 cup linseeds
1/4 teaspoon sea salt
2 teaspoons baking soda
5 eggs
1/4 cup coconut oil (melted)
1 tablespoon honey
1 tablespoon apple cider vinegar
How to do it
1. Place almond flour, coconut flour, linseeds, salt and baking soda in a food processor and pulse the ingredients together.
2. Add in eggs, oil, honey and vinegar and pulse.
3. Take a baking sheet, cover with melted coconut oil and wrinkle it up, place in a loaf tin and spoon in the batter.
4. Bake on 170C for about 40 minutes.
5. Cool and serve.
