Swedish ginger biscuits recipe ………….. yum
Lots of friends have asked me for some lovely Swedish biscuit recipe so over the next few weeks I shall hand you down a few of my favourite ….. lets start with the famous ginger biscuit recipe …….. cook them in a batch and throw them in the freezer for hungry guests popping over for tea ….
Swedish Ginger Biscuits
5 table spoons syrup
4 oz sugar
4½ oz butter
1 level teaspoon ground cinnamon
1 level teaspoon ground ginger
½ -1 level teaspoon ground cloves
1½ teaspoons bicarbonate
About 7½ oz plain flour
Mix the syrup, sugar, butter and spices in a saucepan. Bring to the boil and whisk. Let the mixture cool.
Add the egg and mix well.
Mix the bicarbonate with a little of the flour. Add to the mixture. Work the remainder of the flour into the mixture.
Sprinkle a little four over the pastry, cover with cling film and put in the fridge for a few hours or overnight.
Roll out the ginger biscuit pastry until thin. Cut out the biscuits and place on baking paper.
The biscuits should be baked in the oven at 175 degrees C until golden brown. (About 5 minutes)
keep an eye on them as they burn easily ………………. crunch, crunch, crunch …… make a call, invite some friends … yummy with hot spicy drink … I throw liqurice root, grated ginger, 6 peppercorns, 6 cloves into pan of water … simmer for 15 mins …. mmmm so warming and good for u … I keep it on the hob just adding water when I fancy a new one ……..
