Spelt bread recipe and poached egg ……..



Every other morning I make bread, I love the taste, the smell as it bakes in the swedish interior design oven …… and this recipe is so simple ….. it takes less time to bake than it would to pop out and buy a loaf ……. anyway my husband is spoiled now and charmingly expects it for his breakfast every morning ……. with poached eggs of course…………
Spelt bread recipe and poached egg

Take 500g spelt flour
10g fast acting dry yeast
50g sunflower seeds – 50g sesame seeds – 50g linseeds – add a handful of fennel seeds and honey for a Swedish twist
500ml warm water

Heat oven to 200C – combine all ingredients, adding water last – mix well – turn into greased tin- pop in oven for one hour – remove and leave to cool- yum and gluten free too – you can sprinkle on seeds before the bread goes in oven as I have done in pic above …

I have tried many ways and this works the best for me ….. fresh free range eggs are best … organic duck eggs even better ……. boil water, add salt and drop of white vinegar … crack egg into small cup, just small enough to contain egg…. whisk boiling water to make swirling vortex … pour egg from cup into water ……. four mins later lift out with slotted spoon … drain … add to toast with a slice of cheese and ham …… parsley … black cracked pepper ….. mmmmmmm … I do one egg at a time …..
