Ricotta baked with fresh herbs and salsa Verde….



Even if the summer is laying low outside I’m keeping it going inside at swedish interior design ……..everyday I buy fresh bunches of coriander, mint and parsley ….I normally grow them on our balcony which is over looking the sea but fierce cold  winds and rain its not been such a productive year for all my herbs…….
Ricotta baked with fresh herbs and salsa Verde

Salsa Verde
five handfuls of fresh parsley, basil,coriander, mint, chives …. 5 cloves garlic …. handful of pitted olives …. tablespoon of capers ……. 3 anchovy fillets … 1 teaspoon of dijon mustard.. juice of one lemon ……125 ml virgin olive oil …… seasoning…… put all ingredients except the oil in food processor to for paste ( I keep my food processor out all summer, so its all at hand ) then gradually add the oil ………

                                                              Baked Ricotta

one ricotta …. four garlic cloves ….. one red chilli …… tablespoon of crushed coriander seeds….. handful crushed bay leaves … freshly grated parmesan……………. place ricotta in oven proof dish upon a bed of foil ….. mix garlic, coriander seeds and chilli and oil together … pour on top, tucking in bay leaves underneath … season ……stick in oven at 190 for 20 mins …………. serve with Salsa Verde and fresh home baked bread …… mmmmmm ………sunshine in your heart ……
