Pecan summer roast chicken recipe



Pierce the breast of the chicken, stuff with butter, garlic and fresh herbs, sprinkle chicken with Italian seasoning and salt, pepper and a glug of olive oil …. stick half a lemon in cavity …. place in oven on 200 f Β  …..then after 20 mins take a handful of whole medium sized carrots, handful of new potatoes and parsnips and throw them into the roast … adding more seasoning and oil to veg………..

for the summer veg … take one red pepper, one green pepper, one head of broccoli, one bulb of fennel, one zucchini, bunch of asparagus, stick of celery and two red onions and some vine tomatoes …. chop into chunky slices, keeping the asparagus and tomatoes whole ….. add six cloves of garlic … a glug of olive oil and seasoning ….place in oven dish ….. and put in oven on shelf beneath chicken ………

After one hour ……. sprinkle both dishes with balsamic vinegar, honey and freshly cut lemon and pecan nuts ……. and handful of fresh herbs, mint is delicious in this dish ……place dishes back in oven for 15 mins or so………. take out …… transfer chicken onto a bedΒ of rocket in large serving dish …. the rocket wilts, bringing out the pepper in the leaves beautifully ……… surround the dish with all vegetables …….serve up on the swedish interior design 200 year old antique dining table…….. yummmm ………….
